Winemaking at Domaine des Varoilles – 100% destemmed; cold maceration for 1 week at 8°; 2 weeks temperature controlled fermentation with punching down the cap; soft pressing; 48 hours settling of the juice; gravity feed to barrels.
Malolactic fermenation in barrels; bottled with no fining or filtration.

This is a walled vineyard lying between the town of Gevrey Chambertin and the Premier Cru vineyard of Les Champonnets.

“Domaine des Varoilles has documentary evidence of plantings of some of their vineyards as early as the 12th Century. And quite a rollcall of vineyards too. As a general summary from the wines I tried - deeper colours, good aromatics, balanced and flavourful wines. Given the consistency of the different expressions I would say true to their terroirs. Finally they are good value too. Generally a high standard to the wines.”
